You won't believe it, but I have actually created a banana bread recipe that tastes completely different from the bread that has been on this blog for a while.
Therefore, I can only recommend you to try it out 🤤
The banana bread is great as a snack or for breakfast combined with a protein source and a fruit.
Since I unfortunately only took a photo of my cake when it was already 3/4 eaten, here you have an example photo from Pinterest😝
Ingredients:
2 tbsp ground flaxseed
6 tbsp water
3 ripe bananas
60ml coconut oil
60ml applesauce
90g Xucker or similar (regular sugar can also be used)
1 pack of baking powder
1/2 tsp salt
1 pinch of vanilla extract
1 tsp ground cinnamon
280g wholemeal flour
4 tbsp cocoa nibs
3 tbsp ground nuts

Here's how it's done:
1. In a large bowl, mix the flaxseeds and water and let stand for 5 minutes.
2. Preheat oven to 160 degrees fan-assisted and grease a baking tin of about 25x15 cm with a little oil.
3. Put the bananas in a blender and puree, then mix with the flaxseed, oil, applesauce and sugar.
4. Now add the baking powder, salt, vanilla extract and cinnamon.
5. Add the flour and mix into a dough. Finally, add the cocoa nibs and nuts.
6. Pour everything into the cake pan and, if desired, add more cocoa nibs, nuts, or cinnamon to garnish the bread. Remove the bread from the oven after about 40-50 minutes. Once the top of the bread is golden brown and starts to pull away from the sides, it's done.
