I recently stumbled across a recipe for oatmeal cookies. To be honest, the picture really caught my attention, but I was a bit disappointed with the recipe. So I did some research and created my own recipe.
The cookies turned out sooooo delicious on the first try that I don't want to keep them from you any longer. But I already know that I'll be tweaking the recipe a bit and will definitely want to add more ingredients, toppings, and flavors. To be continued 😉

Recipe for about 18 cookies:
150g fine oat flakes
2 tbsp coconut flakes
100g almond butter
35g rice flour
40g honey
60g liquid coconut oil
10g xylitol
20g coconut sugar (or 30g and then omit the xylitol)
Preparation:
- Preheat oven to 170°C fan
- Put all ingredients in a bowl and mix
- Take about 1 heaped tablespoon of the mixture and form it into a ball, then flatten it to form cookies
- Bake in the middle of the oven for 12-14 minutes until golden brown
